Butcher-block counter tops are made by fusing rails or end pieces of wood. Butcher block tops are usually made from maple, walnut or cherry. Butcher block is favored as a kitchen surface for food preparation. It is strong, durable and does not wear kitchen knives and other utensils. Butcher block absorbs vibrations and shock from chopping, grating and cutting. Good quality wooden cutting tops improve as they age, developing a smooth surface and rich, attractive patina. A butcher block should be seasoned, or prepared, with oil to inhibit the absorption of bacteria, odors and liquids.

Wipe the butcher block liberally with lemon disinfectant or a solution of 10 parts water and one part bleach.
2Wipe again with a clean wet towel. Soak all moisture off the butcher block with towels. Dry completely.
3Warm oil in a small pan.
4Pour the oil over butcher block and wipe with a soft cloth. Allow the oil to soak into the butcher block.
5Let rest about four hours and then wipe off the excess oil.
6Repeat, using warm oil, five times. Do not let the oil sit for longer than five hours or it will oxidize.
7Season butcher block monthly, using the process above. Subsequent applications will require less oil to restore the surface patina.
