How to Seal a Butcher Block Surface

Butcher block requires careful cleaning and seasoning to prevent bacteria growth, water saturation and penetration by food odors. After seasoning, butcher block should be sealed to prevent discoloration and staining. The method of sealing depends on the use of the butcher block. Wood countertops that are used for cutting, chopping and slicing should be sealed with beeswax to create a surface that resists chipping and gouging. Acrylic varnish or polyurethane seals butcher block with a glossy, fine furniture-like finish not intended as a cutting surface. Varnish seal provides an ideal surface for rolling pastry.

Instructions

Sealing a Carving Surface

    Spread a liberal layer of beeswax on seasoned butcher block using a soft cloth.

    Wipe off excess beeswax. Allow to dry.

    Buff beeswax to a shine using a soft cloth.

Sealing a Noncutting Surface

    Clean butcher block surface of dust and other particles. Ensure that it is completely dry.

    Brush on one coat of polyurethane, following the wood grain. Let dry completely.

    Sand lightly with very fine sandpaper.

    7

    Repeat this process, patiently, for at least 15 coats of polyurethane.
