History
The original butcher's block was developed in the 1880s, and was a section of tree trunk attached to a set of legs.
Modern Butcher Block
Modern butcher block is made of hard maple because of the natural durability of the wood. The blocks are created out of lengths of wood glued together.
Types of Butcher Block
End-grain butcher blocks are preferred by professional chefs because the thickness and durability allow for repeated resurfacing. Edge-grain blocks are less expensive because they are easier to make. They are not as thick as end-grain blocks.
Finishes
Butcher block must be finished with the proper natural oil or finish. Some blocks are finished using a pure mineral oil. Tables or countertops can be finished with Durakryl.
Uses
Butcher block is still used by butchers as well as professional chefs. It is also a popular material for use in the home because of its durability and relatively low cost.
